Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Use a good-quality flour like King Arthur Flour.
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground nutmeg Freshly grated for best flavor.
  • 1/2 teaspoon ground cinnamon
Wet Ingredients
  • 1/2 cup unsalted butter, softened Kerrygold adds richness.
  • 1 cup eggnog Homemade eggnog enhances flavor.
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
Glaze Ingredients
  • 1 cup powdered sugar
  • 2 tablespoons milk Any plant-based milk is suitable.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, nutmeg, and cinnamon.
  3. In another bowl, beat the softened butter, eggnog, eggs, and vanilla extract until smooth.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Grease a 9 x 5-inch loaf pan.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick comes out clean.
  2. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
Glazing
  1. In a bowl, mix powdered sugar and milk until smooth.
  2. Drizzle the glaze over the cooled bread.

Notes

Store wrapped at room temperature for up to 3 days, in the fridge for up to a week, or freeze for up to 2 months. Can be made-ahead by keeping batter in the fridge for two days before baking.
