- In a medium bowl, combine the goat cheese, cream cheese, lemon zest, chives, and black pepper. Mix until smooth and uniform, about 2 minutes.
- Using a small spoon or melon baller, portion the cheese mixture into eight equal balls and place them on a parchment-lined tray.
- Wrap each cheese ball with one slice of prosciutto, tucking the ends underneath to secure it.
- Arrange the wrapped bonbons on a serving plate and drizzle honey evenly over the top.
- Refrigerate the bonbons for at least 30 minutes to allow them to firm up before serving.
- Just before serving, top each bonbon with a few microgreens for garnish.
Notes
These bonbons can be made a day in advance; store without garnish until ready to serve. They should stay fresh in an airtight container for up to 3 days in the fridge. For a vegetarian version, skip the prosciutto or use a slice of sundried tomato instead.
