Cheese Mixture
  • 4 oz goat cheese Look for creamy, fresh goat cheese. If you want a milder flavor, mix with cream cheese.
  • 2 oz cream cheese Make sure it's at room temperature for easy mixing.
  • 1 tsp lemon zest Fresh is best to brighten the flavors.
  • 1 tsp chopped fresh chives Adds freshness; substitute with fresh herbs if desired.
  • 1/2 tsp freshly ground black pepper Use freshly ground for best flavor.
Wrapping and Garnish
  • 8 slices prosciutto Choose high-quality prosciutto for the best taste.
  • 1 tbsp honey A drizzle of good honey adds sweet contrast.
  • 1 handful microgreens For garnish and a fresh bite.

Method
 

Preparation
  1. In a medium bowl, combine the goat cheese, cream cheese, lemon zest, chives, and black pepper. Mix until smooth and uniform, about 2 minutes.
  2. Using a small spoon or melon baller, portion the cheese mixture into eight equal balls and place them on a parchment-lined tray.
  3. Wrap each cheese ball with one slice of prosciutto, tucking the ends underneath to secure it.
  4. Arrange the wrapped bonbons on a serving plate and drizzle honey evenly over the top.
  5. Refrigerate the bonbons for at least 30 minutes to allow them to firm up before serving.
  6. Just before serving, top each bonbon with a few microgreens for garnish.

Notes

These bonbons can be made a day in advance; store without garnish until ready to serve. They should stay fresh in an airtight container for up to 3 days in the fridge. For a vegetarian version, skip the prosciutto or use a slice of sundried tomato instead.
