Preparation
  1. In a mixing bowl, combine almond flour, ground flaxseed, and salt thoroughly.
  2. Add finely chopped spinach to the mixture, ensuring it’s evenly distributed.
  3. Gradually add water until a dough forms; it should be slightly sticky but manageable.
  4. Divide the dough into small balls and flatten them into thin rounds, about 1/6-inch thick.
Cooking
  1. Cook each tortilla on a hot skillet for about 1-2 minutes on each side until golden and cooked through.
  2. Serve warm as wraps for tacos, burritos, or any desired filling.

Notes

To reheat your tortillas, place them in an oven or air fryer for a few minutes until warmed through; avoid using a microwave to preserve their unique texture. These tortillas can be made ahead and stored in an airtight container in the fridge for a couple of days or frozen for up to 2 months.
