  • 2 scoops pumpkin seed protein (30g) Adds a plant-based protein punch.
  • pinch salt Optional, adds balance to the flavors.
  • 2 tablespoons maple syrup Or favorite liquid sweetener.
  • 1/2 teaspoon vanilla extract Opt for pure extract for the best taste.

Method

Preparation
  1. Gather all your ingredients and a food processor.
  2. Add all the ingredients to the food processor and blend on high speed for about 30 seconds. Stop to scrape the sides until the dough clumps together like soft cookie dough.
  3. If the mixture feels dry, add a splash of extra maple syrup until you reach a sticky, moldable consistency.
  4. Using a tablespoon, scoop the dough and roll it into balls. You should get approximately 12 energy balls.
  5. For a decadent touch, dip your energy balls in melted dark chocolate and let them set before storage.
  6. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 2 months. Chill for at least 30 minutes before enjoying for the best texture.
