Grilling and Assembling
  1. Preheat your grill to high.
  2. Season the carne asada with salt and pepper. Grill the steak for about 5-7 minutes per side for medium-rare, or until your desired doneness.
  3. Let the carne asada rest off the grill for about 5 minutes to allow the juices to redistribute.
  4. Chop the grilled carne asada into bite-sized pieces.
  5. Warm the corn tortillas in a dry skillet or on the grill for about 30 seconds on each side until pliable and slightly charred.
  6. Place a portion of chopped carne asada on each tortilla.
  7. Sprinkle chopped onion and cilantro on top, adding a pinch of salt and pepper to taste.
  8. Serve with lime wedges and optional salsa or avocado.

Notes

For a healthier option, incorporate beans or load up on veggies. Cilantro adds antioxidants and detoxifying properties. For storage, keep beef and tortillas separately in airtight containers.
