  • 1 lb shrimp, peeled and deveined Look for wild-caught for superior flavor.
  • 1 lb scallops
  • 1 lb firm fish (like salmon or swordfish), cut into chunks Opt for sushi-grade varieties for freshness.
  • 1 large bell pepper, cut into squares
  • 1 medium zucchini, sliced
  • 1 medium red onion, cut into squares
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice Fresh is preferred for better flavor.
  • 2 cloves garlic, minced
  • to taste Salt and pepper Limit sodium by using low-sodium soy sauce if desired.
  • as needed Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes to prevent burning.

Preparation
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. In a large bowl, combine olive oil, lemon juice, garlic, salt, and pepper.
  3. Add the shrimp, scallops, fish, bell pepper, zucchini, and onion to the bowl. Toss everything gently to ensure even coating.
  4. Begin threading the seafood and vegetables onto the skewers, alternating ingredients for visual appeal and flavor balance.
  5. Preheat the grill to medium-high heat for optimal cooking.
Cooking
  1. Cook the skewers for about 2-3 minutes on each side. They are ready when the seafood is opaque and cooked through.
Serving
  1. Plate the skewers and serve with additional lemon wedges for an extra zest.

Notes

For additional flavor, serve skewers with fresh herbs and a drizzle of olive oil. Pair with chilled rosé or crisp white wine.
