For the Bruschetta
  • 1 loaf loaf of baguette Opt for a fresh, crusty baguette from a local bakery for optimal taste.
  • 4 cloves garlic Freshly minced or roasted.
  • 4 tbsp extra virgin olive oil Use quality oil, such as California Olive Ranch.
  • 1 tbsp balsamic vinegar Aged for depth of flavor; Colavita is recommended.
  • 200 g cherry tomatoes Sweet and juicy varieties like Kumato are ideal.
  • 2 tbsp fresh basil leaves, chopped Garden-fresh basil lends a fragrant aroma.
  • 1 tsp sea salt For balancing flavors.
  • 1/2 tsp freshly ground black pepper Adds a perfect peppery touch.

Method
 

Preparation
  1. Preheat your grill or grill pan to medium-high heat, around 400°F (200°C).
  2. Slice the baguette diagonally into 1/2-inch thick pieces.
  3. In a small bowl, whisk together minced garlic, extra virgin olive oil, balsamic vinegar, sea salt, and black pepper.
  4. Brush both sides of each bread slice with half of the garlic-oil mixture.
  5. Grill the slices for 1–2 minutes per side until golden grill marks appear.
  6. While the bread is grilling, halve the cherry tomatoes and toss them with the remaining garlic-oil mixture and chopped basil.
  7. Remove the bread from the grill, and immediately rub each slice with a garlic clove.
  8. Top each grilled slice with a spoonful of the tomato and basil mixture.
  9. Serve warm or at room temperature.

Notes

Choose quality ingredients for the best flavor. Store leftovers separately to avoid sogginess. Prepare the tomato mixture ahead of time for easy serving.
