  • 2.5 tbsp olive oil Good quality extra virgin olive oil, can substitute with avocado oil.
  • 1 lb ground turkey Opt for lean ground turkey (93% lean recommended).
  • 1.5 tsp garlic, freshly minced Fresh garlic is preferred, can substitute with garlic powder.
  • 1/2 cup onions Yellow or white onions work well.
  • 1/2 cup yellow pepper Substitute with red or green peppers if preferred.
  • 1.75 cups sweet potato, peeled and diced Cut into 1/2-inch cubes; can substitute with butternut squash.
  • Salt and black pepper Essential seasonings.
  • 1/4 tsp red chili flakes Adjust according to spice tolerance.
  • 1/2 tsp smoked paprika Adds depth of flavor.
  • 3/4 cup mozzarella cheese Part-skim mozzarella or pepper jack for spice.
  • Fresh parsley For garnish.

Method
 

Preparation
  1. Peel and dice the sweet potatoes into 1/2-inch cubes. Finely mince the garlic, dice the onions, and chop the yellow pepper.
  2. Preheat your oven to 400 degrees F.
  3. In a large oven-safe skillet, heat 2.5 tablespoons of olive oil over medium-high heat.
Cooking
  1. Add the ground turkey and minced garlic to the skillet, breaking it up as it cooks for about 5 minutes until it’s no longer pink.
  2. Stir in the diced onions and yellow pepper, cooking for an additional 3-4 minutes until the onions are translucent.
  3. Toss in the diced sweet potatoes, red chili flakes, smoked paprika, salt, and black pepper. Cover the skillet and cook for 8-10 minutes, or until the sweet potatoes are fork-tender.
  4. Remove the skillet from the stovetop, sprinkle the mozzarella cheese evenly over the top, and transfer to the preheated oven.
  5. Bake for 5-7 minutes in the oven until the cheese is melted and bubbly.
  6. Let the skillet cool for a couple of minutes, then garnish with fresh parsley before serving.

Notes

To avoid mushy sweet potatoes, ensure they are cut evenly. For extra flavor, add a splash of low-sodium chicken broth when covering the sweet potatoes.
