Preparation
- Peel and dice the sweet potatoes into 1/2-inch cubes. Finely mince the garlic, dice the onions, and chop the yellow pepper.
- Preheat your oven to 400 degrees F.
- In a large oven-safe skillet, heat 2.5 tablespoons of olive oil over medium-high heat.
Cooking
- Add the ground turkey and minced garlic to the skillet, breaking it up as it cooks for about 5 minutes until it’s no longer pink.
- Stir in the diced onions and yellow pepper, cooking for an additional 3-4 minutes until the onions are translucent.
- Toss in the diced sweet potatoes, red chili flakes, smoked paprika, salt, and black pepper. Cover the skillet and cook for 8-10 minutes, or until the sweet potatoes are fork-tender.
- Remove the skillet from the stovetop, sprinkle the mozzarella cheese evenly over the top, and transfer to the preheated oven.
- Bake for 5-7 minutes in the oven until the cheese is melted and bubbly.
- Let the skillet cool for a couple of minutes, then garnish with fresh parsley before serving.
Notes
To avoid mushy sweet potatoes, ensure they are cut evenly. For extra flavor, add a splash of low-sodium chicken broth when covering the sweet potatoes.
