Preparation
- Preheat your oven to 350 degrees F.
- Dice the yellow onion and mince the garlic.
- In a large skillet over medium-high heat, add a splash of oil and cook the ground turkey and diced onion for about 2 minutes until the meat is no longer pink.
Cooking
- Add the bell peppers and minced garlic to the skillet. Sauté for 4-6 minutes until the peppers start to soften.
- Pour in the diced tomatoes and marinara sauce. Stir in the Italian seasoning, garlic powder, salt, black pepper, and red pepper flakes. Mix well.
- Incorporate the spinach, cooking for 2-3 minutes until wilted.
- Fold in the cooked rice until everything is well combined.
- Pour the mixture into a greased baking dish, smoothing it out evenly. Sprinkle mozzarella over the top.
- Place the casserole in the preheated oven and bake for 20-30 minutes until the cheese is bubbly and golden.
- Let the casserole rest for about 5 minutes. Garnish with chopped parsley and serve warm.
