  • 1.25 tsp salt Enhances flavor; taste before adding more.
  • 1 tsp black pepper Adjust for heat; freshly cracked is best.

  • 3 cups spinach, loosely packed Fresh or frozen can work.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Dice the yellow onion and mince the garlic.
  3. In a large skillet over medium-high heat, add a splash of oil and cook the ground turkey and diced onion for about 2 minutes until the meat is no longer pink.
Cooking
  1. Add the bell peppers and minced garlic to the skillet. Sauté for 4-6 minutes until the peppers start to soften.
  2. Pour in the diced tomatoes and marinara sauce. Stir in the Italian seasoning, garlic powder, salt, black pepper, and red pepper flakes. Mix well.
  3. Incorporate the spinach, cooking for 2-3 minutes until wilted.
  4. Fold in the cooked rice until everything is well combined.
  5. Pour the mixture into a greased baking dish, smoothing it out evenly. Sprinkle mozzarella over the top.
  6. Place the casserole in the preheated oven and bake for 20-30 minutes until the cheese is bubbly and golden.
  7. Let the casserole rest for about 5 minutes. Garnish with chopped parsley and serve warm.

Notes

Letting the casserole sit after baking makes for easier serving. Use quality ingredients for the best flavors. Can be made ahead of time and stored.
