  • 1/2 cup corn syrup Light corn syrup adds sweetness and prevents crystallization.
  • 1/2 teaspoon salt Enhances the flavor.
  • 1/2 teaspoon baking soda Gives the caramel a light texture.
  • 1 cup nuts (optional) Roasted pecans or almonds for added crunch.

Method
 

Preparation
  1. Preheat your oven to 250°F (120°C).
  2. Pop the popcorn and transfer into a mixing bowl, ensuring no unpopped kernels remain.
Making the Caramel
  1. In a medium saucepan, combine sugar, butter, corn syrup, and salt. Bring to a boil over medium heat.
  2. Allow to boil for 4-5 minutes without stirring until light golden in color.
  3. Remove from heat and stir in baking soda carefully.
Combining
  1. Drizzle caramel over popcorn and mix until evenly coated.
  2. If using nuts, fold them in gently.
Baking
  1. Spread the mixture on a lined baking sheet.
  2. Bake for 1 hour, stirring every 15 minutes.
