  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup crushed pineapple, drained Use fresh pineapple for better flavor.
  • 1 cup sour cream Opt for organic sour cream for creaminess.
  • 3 pieces eggs
  • 1 teaspoon vanilla extract
Optional
  • cream cheese frosting Frosting optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time until fully incorporated.
  4. Mix in the crushed pineapple, sour cream, and vanilla extract, combining until smooth.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared cake pan and spread evenly.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool completely before frosting with cream cheese frosting if desired.

Notes

For added tropical flair, garnish with shredded coconut or maraschino cherries.
