Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time until fully incorporated.
- Mix in the crushed pineapple, sour cream, and vanilla extract, combining until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared cake pan and spread evenly.
Baking
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool completely before frosting with cream cheese frosting if desired.
Notes
For added tropical flair, garnish with shredded coconut or maraschino cherries.
