Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil Use extra virgin for best flavor
  • to taste salt and pepper For seasoning
For the Salad
  • 5 cups mixed salad greens Recommended: baby spinach and arugula
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, sliced English cucumbers are less seedy
  • 1 piece avocado, diced Use ripe but firm avocados
  • 1/4 cup red onion, thinly sliced Adds mild sweetness
  • 1/4 cup feta cheese, crumbled Or goat cheese for a creamier taste
  • 1 to taste your choice of salad dressing Homemade vinaigrette with lemon and mustard recommended

Method
 

Preparation
  1. Season the chicken breasts with olive oil, salt, and pepper, then marinate for at least 15 minutes.
  2. Preheat the grill or grill pan to medium-high heat.
Cooking
  1. Grill the chicken for 6-7 minutes on each side until cooked through, reaching an internal temperature of 165°F.
Assembly
  1. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, avocado, red onion, and feta cheese.
  2. Once the chicken is done, let it rest for a couple of minutes before slicing into thin strips.
  3. Add the grilled chicken slices to the salad mix and drizzle with olive oil and salad dressing, then toss gently.

Notes
