Healthy Mango Cherry Popsicles

A refreshing combination of ripe mangoes and tart cherries blended into popsicles without any added sugars. Perfect for cooling down on a hot summer day!

Ingredients
  

Main Ingredients
  • 1 heaping cup mango (fresh or frozen) Choose ripe mangoes for the best flavor.
  • 1 heaping cup pitted cherries (fresh or frozen) Fresh, ripe cherries make for a vibrant flavor.
  • 1/4 cup coconut cream Use full-fat coconut cream for the best texture.
  • 1/4 cup water
  • 1 Tbsp lemon juice
  • 1 pinch salt

Method
 

Preparation
  1. Gather your mango, cherries, coconut cream, water, lemon juice, and salt. If using fresh fruits, wash and chop your mango into chunks and pit your cherries.
Blending
  1. In a blender, combine all popsicle ingredients. Blend on high until you achieve a smooth, creamy consistency, around 1-2 minutes.
  2. For an added depth of flavor, let your blended mixture rest for a couple of minutes before blending again.
Molding
  1. Carefully pour the mixture into popsicle molds, filling them to about 3/4 full.
  2. Insert popsicle sticks into the molds and freeze overnight or for at least 6 hours until solid.
Serving
  1. To remove the popsicles from the molds, run warm water over the outside for about 10 seconds before gently pulling them out.
  2. Bite into the refreshing goodness, and let the flavors burst in your mouth!

Notes

Store popsicles in a sealed container in the freezer for up to 2-3 months. Experiment with different fruits to customize flavors.
