  • 1.25 cups boiling water Make sure it's actually boiling for the best texture.
  • 1 cup cherry tomatoes, halved The sweeter the tomatoes, the better your salad will taste.
  • 1 cucumber, diced Opt for English cucumbers for fewer seeds and better crunch.
  • 0.5 red onion, finely chopped Soaking in cold water helps mellow the onion’s bite if desired.
  • 1 bell pepper, diced Choose any color for a vibrant presentation!
  • 0.5 cup feta cheese, crumbled Go for fresh feta for creaminess; it elevates the dish.
  • 0.25 cup olives, sliced Kalamata adds a deep, savory note.
  • 2 tablespoons olive oil Extra virgin olive oil provides the best flavor.
  • 1 lemon, juiced Freshly squeezed for maximum zing!

Method
 

Preparation
  1. In a medium bowl, combine 1 cup of couscous and 1 1/4 cups of boiling water. Cover the bowl with a lid or plastic wrap and let it sit for about 5 minutes.
  2. Fluff the couscous with a fork after this time.
  3. In a large mixing bowl, toss together the halved cherry tomatoes, diced cucumber, finely chopped red onion, diced bell pepper, crumbled feta cheese, and sliced olives.
Dressing and Mixing
  1. In a small bowl, whisk together 2 tablespoons of olive oil, the juice of your lemon, salt, and pepper until nicely blended.
  2. Pour the dressing over the vegetable mixture and gently toss to combine everything evenly.
  3. Add the fluffed couscous to the vegetable mix and stir everything together until well combined.
Garnishing
  1. Finally, sprinkle freshly chopped parsley on top and serve chilled or at room temperature.

Notes

If couscous clumps together, a drizzle of olive oil can help separate the grains. Consider letting your salad sit for about 30 minutes before serving to allow the flavors to meld beautifully.
