Healthy Strawberry Watermelon Popsicles

Ingredients
  

Main Ingredients
  • 2 cups cubed watermelon Choose a ripe, sweet watermelon, preferably organic if possible, for maximum flavor.
  • 1 cup chopped strawberries Fresh is preferred, but frozen strawberries can also be used in a pinch. Thaw before using.
  • 1 Tbsp raw honey Optional, for a touch of extra sweetness.
  • 1 Tbsp beet powder Optional, adds color and nutritional benefits.
  • 1 Juice lime Fresh juice adds brightness.
  • 1 pinch salt Optional, enhances the overall flavor.

Method
 

Preparation
  1. Add all popsicle ingredients to a blender, starting with the watermelon, followed by the strawberries, lime juice, honey (if using), beet powder (if using), and salt (if using).
  2. Blend until smooth and well combined, about 30 seconds to 1 minute. Add a splash of water if it's too thick.
  3. Pour mixture into a popsicle mold, leaving about half an inch of space at the top.
  4. Insert popsicle sticks and freeze overnight or for at least 4 hours.
  5. To remove, run warm water on the outside of the mold for about 10-15 seconds.

Notes

Store popsicles in an airtight freezer bag for up to two months. Feel free to customize with other fruits or flavors as desired.
