For the base
  • 1 cup all-purpose flour Use good-quality flour like King Arthur or Bob’s Red Mill.
  • 1/2 cup rolled oats Use old-fashioned rolled oats for the right chewiness.
  • 1/2 teaspoon baking powder Ensure it's fresh for maximum lift.
  • 1/4 teaspoon salt Balances the sweetness.
  • 1/2 cup packed brown sugar Light or dark; use based on preference for caramel notes.
  • 1/4 cup granulated white sugar Adds essential sweetness.
  • 1/2 cup unsalted butter, melted Room temperature or slightly warmed for blending.
  • 1 large egg Best at room temperature for easy incorporation.
  • 1 teaspoon vanilla extract Pure extract adds warmth.
  • 1 cup dried cranberries Look for unsweetened versions for a less sugary bite.
  • 1/2 cup white chocolate chips Ghirardelli is recommended for a creamy finish.
For the frosting
  • 1/2 cup cream cheese, softened Full-fat cream cheese gives the best texture.
  • 1/4 cup powdered sugar Sweetens the frosting.
  • 1 teaspoon orange zest Adds a delightful citrus note.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan with parchment paper or cooking spray.
  2. In a bowl, mix the dry ingredients: 1 cup of flour, 1/2 cup of rolled oats, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Set aside.
  3. In another bowl, whisk together 1/2 cup of packed brown sugar, 1/4 cup of granulated white sugar, 1/2 cup of melted unsalted butter, 1 large egg, and 1 teaspoon of vanilla extract until smooth.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Fold in 1 cup of dried cranberries and 1/2 cup of white chocolate chips.
  6. Pour the batter into the prepared pan and spread it evenly.
Baking
  1. Bake for 25-30 minutes until lightly golden; a toothpick should come out with a few moist crumbs.
Frosting
  1. While the bars cool, whip together 1/2 cup of softened cream cheese, 1/4 cup of powdered sugar, and 1 teaspoon of orange zest until smooth.
  2. Once bars are cool, spread the cream cheese frosting on top, cut into squares, and serve.

Notes

Store leftover bars in an airtight container for up to three days, refrigerate for up to a week, or freeze for three months. Customize with fruit, nuts, or different extracts as desired.
