Preparation
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan with parchment paper or cooking spray.
- In a bowl, mix the dry ingredients: 1 cup of flour, 1/2 cup of rolled oats, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Set aside.
- In another bowl, whisk together 1/2 cup of packed brown sugar, 1/4 cup of granulated white sugar, 1/2 cup of melted unsalted butter, 1 large egg, and 1 teaspoon of vanilla extract until smooth.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
- Fold in 1 cup of dried cranberries and 1/2 cup of white chocolate chips.
- Pour the batter into the prepared pan and spread it evenly.
Baking
- Bake for 25-30 minutes until lightly golden; a toothpick should come out with a few moist crumbs.
Frosting
- While the bars cool, whip together 1/2 cup of softened cream cheese, 1/4 cup of powdered sugar, and 1 teaspoon of orange zest until smooth.
- Once bars are cool, spread the cream cheese frosting on top, cut into squares, and serve.
Notes
Store leftover bars in an airtight container for up to three days, refrigerate for up to a week, or freeze for three months. Customize with fruit, nuts, or different extracts as desired.
