Ingredients
  

For the Cupcakes
  • 1 cup all-purpose flour

  • 1/2 cup unsweetened cocoa powder Use high-quality cocoa powder for a richer flavor.
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk Can substitute with milk mixed with vinegar or lemon juice.
  • 2 large eggs For a vegan option, substitute with flax eggs.
  • 1 tsp vanilla extract
  • 1/2 cup brewed coffee (cooled) Opt for a medium roast for best flavor.
For the Whipped Coffee Cream and Ganache
  • 1 cup heavy cream Whipped until soft peaks form.
  • 1/4 cup sugar For sweetening the whipped cream.
  • 1/2 cup semi-sweet chocolate Melted for ganache.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix together the vegetable oil, buttermilk, eggs, vanilla extract, and cooled brewed coffee until smooth.
  4. Gradually combine the wet and dry ingredients, stirring gently until just combined; do not overmix.
  5. Pour the batter into the prepared cupcake liners, filling them about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. While the cupcakes cool, whip the heavy cream with sugar until soft peaks form for the coffee cream.
  8. For the ganache, melt the chocolate over a double boiler or in the microwave, stirring until smooth.
  9. Once the cupcakes are cool, cut a small hole in the center of each, fill with the whipped coffee cream, and drizzle with chocolate ganache.
  10. Serve and enjoy your chocolate coffee cupcakes.
