Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- In another bowl, mix together the vegetable oil, buttermilk, eggs, vanilla extract, and cooled brewed coffee until smooth.
- Gradually combine the wet and dry ingredients, stirring gently until just combined; do not overmix.
- Pour the batter into the prepared cupcake liners, filling them about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- While the cupcakes cool, whip the heavy cream with sugar until soft peaks form for the coffee cream.
- For the ganache, melt the chocolate over a double boiler or in the microwave, stirring until smooth.
- Once the cupcakes are cool, cut a small hole in the center of each, fill with the whipped coffee cream, and drizzle with chocolate ganache.
- Serve and enjoy your chocolate coffee cupcakes.
