  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth Use low-sodium broth if desired.
  • 1 can (12 ounces) Guinness beer Opt for the traditional stout.
  • 2 teaspoons thyme
  • 2 leaves bay leaves

  • 2 tablespoons olive oil

Preparation
  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Brown the beef cubes on all sides, creating a caramelized crust—around 5-7 minutes.
  3. Add the onions and garlic, stirring until softened and fragrant—about 3 minutes.
  4. Stir in the tomato paste and cook for another minute, allowing it to meld with the meat.
Cooking
  1. Pour in the Guinness beer and beef broth, using a wooden spoon to scrape the bottom of the pot.
  2. Add the carrots, potatoes, thyme, bay leaves, salt, and pepper, ensuring even distribution.
  3. Bring to a simmer, cover, and reduce the heat to low. Cook for 1.5 to 2 hours, or until the beef is fork-tender.
  4. Adjust seasoning if necessary, remove the bay leaves, and serve hot.
