- In your food processor, combine the shredded coconut, sunflower seeds, vanilla protein powder, and salt. Pulse for about 20 seconds until finely ground.
- Add the pitted medjool dates and vanilla extract. Pulse again until the mixture starts to clump together.
- Gradually add the water, one tablespoon at a time, pulsing after each addition until a cohesive dough forms.
- Scoop out tablespoon-sized portions and roll them into balls with clean hands.
- Place the balls in an airtight container and refrigerate them.
Notes
Enhance flavor by adding cinnamon or mini dark chocolate chips. Store in a lined container to prevent sticking.
