  • ½ cup unsweetened shredded coconut Use organic, finely shredded coconut if possible.
  • ¼ cup raw sunflower seeds Pumpkin seeds can be used as an alternative.
  • cup plant-based vanilla protein powder Look for high-quality protein powder without artificial flavors.
  • 3 medjool dates pitted medjool dates Soften in warm water if they feel dry.
  • 1 tsp vanilla extract Use pure vanilla extract for maximum flavor.
  • tsp salt A pinch to elevate sweetness.
  • 3 Tbsp water Add as needed to bind the mixture.

Method
 

Preparation
  1. In your food processor, combine the shredded coconut, sunflower seeds, vanilla protein powder, and salt. Pulse for about 20 seconds until finely ground.
  2. Add the pitted medjool dates and vanilla extract. Pulse again until the mixture starts to clump together.
  3. Gradually add the water, one tablespoon at a time, pulsing after each addition until a cohesive dough forms.
  4. Scoop out tablespoon-sized portions and roll them into balls with clean hands.
  5. Place the balls in an airtight container and refrigerate them.

Notes

Enhance flavor by adding cinnamon or mini dark chocolate chips. Store in a lined container to prevent sticking.
