Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cottage cheese, olive oil, and egg. Whisk until smooth.
  3. Add the flour, baking powder, and salt into the mixture. Stir until just combined.
  4. Gently fold in the finely chopped spinach and shredded mozzarella cheese.
  5. Lightly dust your hands with flour, take a portion of the dough, and form a ball. Press your thumb into the center to create a bagel shape.
  6. Place each shaped flagel onto the prepared baking sheet.
  7. Bake for 18-20 minutes or until golden brown and puffed.
  8. Remove from the oven and let cool slightly on a wire rack before serving.

Notes

These flagels are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate them for up to a week or freeze for up to a month. Don’t be shy with the mozzarella—feel free to add more cheese for an even cheesier flagel experience.
