Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the cottage cheese, olive oil, and egg. Whisk until smooth.
- Add the flour, baking powder, and salt into the mixture. Stir until just combined.
- Gently fold in the finely chopped spinach and shredded mozzarella cheese.
- Lightly dust your hands with flour, take a portion of the dough, and form a ball. Press your thumb into the center to create a bagel shape.
- Place each shaped flagel onto the prepared baking sheet.
- Bake for 18-20 minutes or until golden brown and puffed.
- Remove from the oven and let cool slightly on a wire rack before serving.
Notes
These flagels are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate them for up to a week or freeze for up to a month. Don’t be shy with the mozzarella—feel free to add more cheese for an even cheesier flagel experience.
