  • 1 cup granulated sugar Adds sweetness and slight crunch
  • 1 large egg Gives structure; use room temperature for better incorporation
  • 1 teaspoon vanilla extract Pure vanilla gives more depth; I love Nielsen-Massey
  • 1 tablespoon orange zest Freshly grated for a bright flavor punch
Icing
  • 1 cup powdered sugar
  • 2 tablespoons orange juice Freshly squeezed enhances the flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined. Sift if desired.
  3. In another bowl, cream the softened butter and granulated sugar together until light and fluffy—about 3 to 4 minutes.
  4. Beat in the egg, vanilla extract, and orange zest until well incorporated.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Using a tablespoon or cookie scoop, drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake in the preheated oven for 10-12 minutes until the edges are set but the centers remain soft.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Icing
  1. Whisk together the powdered sugar and orange juice until smooth and drizzle over the cooled cookies.

Notes

Store cookies in an airtight container at room temperature for up to 7 days, or freeze for longer. You can customize with nuts or different flavor extracts.
