Preparation
  1. Preheat your oven to 375 degrees F.
  2. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Crumble it and reserve 1 tablespoon of bacon grease.
  3. Pat the chicken thighs dry with a paper towel and season each side with salt and pepper.
  4. Sear the chicken in the reserved bacon grease over medium-high heat for about 3-4 minutes per side until golden brown.
  5. Transfer the seared chicken to a baking dish, arranging them in a single layer.
Filling Preparation and Baking
  1. In a bowl, mix softened cream cheese, cream, minced garlic, and onion powder until smooth.
  2. Spread the cream cheese mixture over each chicken thigh and top with sliced jalapenos, crumbled bacon, and cheddar cheese.
  3. Bake in the oven for 20 minutes, until the chicken reaches an internal temperature of 165°F and the cheese is melted and bubbly.
  4. Let it rest for 2-3 minutes before serving.
