Ingredients
  

Main Ingredients
  • 3 cups dried sorrel (hibiscus) Look for high-quality, organic dried sorrel.
  • 3/4 pound fresh ginger, grated Can substitute with 1/4 cup ginger paste.
  • 10 whole cloves Whole spices perform best in this recipe.
  • 10 berries allspice Can swap for ground allspice in a pinch.
  • 2 1/2 cups sugar Can use alternatives like agave syrup.

Method
 

Preparation
  1. In a large pot, bring 8 cups of water to a rolling boil.
  2. Once boiling, add the dried sorrel, freshly grated ginger, cloves, and allspice berries. Allow to boil for 8 minutes.
  3. After 8 minutes, remove the pot from heat and let the mixture cool. Cover it and refrigerate for a minimum of 8 hours.
  4. When ready, pass the mixture through a fine-mesh strainer to filter out solids.
  5. In a separate saucepan, combine 1 cup of water and 1 cup of sugar over medium heat, stirring until dissolved. Cool and add gradually to the strained sorrel juice to taste.

Notes

Taste as you go and adjust sweetness as needed. Store in an airtight container in the fridge for up to a week.
