Preparation
- Toast the sesame seeds in a dry sauté pan over medium-high heat for 4-5 minutes until golden, then reduce to medium and continue for another 2-3 minutes until deep brown. Transfer to a plate to cool.
- Once cooled, grind the sesame seeds in a mortar and pestle or food processor until they resemble a fine meal.
- Add all remaining ingredients to the mortar with the ground sesame seeds and whisk until smooth.
- Taste and adjust seasonings as needed for sweetness or saltiness.
- Transfer to an airtight container and store in the fridge, mixing well before each use.
Notes
Store in the fridge for up to two weeks. Whole sesame seeds give a richer flavor when toasted.
