For the Pie
  • 1 9-inch unbaked pie crust Store-bought or homemade
  • 1 cup shredded coconut unsweetened preferred for balance
  • 1 cup chopped walnuts or pecans or a mix of both
  • 1 cup granulated sugar use organic for a richer flavor
  • 3 large eggs lightly beaten, at room temperature
  • ½ cup unsalted butter melted and slightly cooled
  • 1 tsp vanilla extract optional but enhances flavor
  • 1 pinch salt to elevate sweetness
  • ½ cup semi-sweet chocolate chips optional, adds decadence
  • ½ tsp cinnamon or nutmeg for warmth and depth
  • 1 tsp orange or lemon zest for citrus brightness

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Place your unbaked pie crust into a 9-inch pie dish and crimp the edges.
  3. In a large mixing bowl, combine the shredded coconut, chopped nuts, sugar, and salt.
  4. Add the lightly beaten eggs and melted butter to the mixture and stir until well combined.
  5. If desired, mix in chocolate chips, spices, or citrus zest.
  6. Pour the filling into your prepared pie crust and spread evenly.
  7. Bake for 30-40 minutes, checking for a golden brown top and that it's set in the center.
  8. Let the pie cool completely before slicing.

Notes

Store covered at room temperature for up to 2 days or refrigerate for up to a week. This pie also freezes well for up to 3 months.
