Preparation
- Preheat your oven to 350°F (175°C).
- Place your unbaked pie crust into a 9-inch pie dish and crimp the edges.
- In a large mixing bowl, combine the shredded coconut, chopped nuts, sugar, and salt.
- Add the lightly beaten eggs and melted butter to the mixture and stir until well combined.
- If desired, mix in chocolate chips, spices, or citrus zest.
- Pour the filling into your prepared pie crust and spread evenly.
- Bake for 30-40 minutes, checking for a golden brown top and that it's set in the center.
- Let the pie cool completely before slicing.
Notes
Store covered at room temperature for up to 2 days or refrigerate for up to a week. This pie also freezes well for up to 3 months.
