  1. In a high-speed blender, combine the ripe avocados, cocoa powder, almond milk, sweetener, vanilla extract, and salt. Blend until smooth and creamy, scraping down the sides as necessary.
  2. Pour the blended mixture into a large mixing bowl. Stir in the chia seeds until they are evenly spread throughout.
  3. Distribute the pudding into individual serving bowls or a large dish and refrigerate for at least 2 hours, preferably overnight.
  4. Serve the pudding chilled, topped with your favorite low-carb toppings like coconut flakes, nuts, or berries.

Notes

Pudding can be stored in an airtight container in the fridge for up to 4 days. For meal prep, make it at the beginning of the week for easy access to a sweet treat.
