Ingredients
  

Tortillas
  • 8-10 pieces keto corn tortillas (homemade or store-bought) You can use almond flour for homemade tortillas.
Meat & Vegetables
  • 1 lb ground beef (at least 10% fat) Use grass-fed beef for better flavor.
  • 1/2 cup onion (diced)
  • 1/2 cup green pepper (diced)
  • 1 tablespoon olive oil
  • 1/2 can green chiles (about 2 oz)
  • 1 cup full-fat cooking cream Rich in calcium, helps in absorption of vitamins.
Seasoning & Cheese
  • 1 tablespoon homemade taco seasoning Include chili powder, garlic powder, cumin, paprika, and red pepper flakes.
  • 2 cups cheddar & Monterey Jack cheese (shredded) Cheeses should melt beautifully together.
  • 1/2 cup chopped green onions (for topping)

Method
 

Preparation
  1. If you're making homemade tortillas, mix the almond flour and eggs to form a dough. Roll into small balls and flatten into thin disks. Cook in a hot skillet until slightly crispy, then set aside.
  2. In a large, heavy-bottomed cast iron skillet, heat olive oil over medium heat. Add diced onions and green peppers, sautéing until soft.
  3. Incorporate ground beef and brown thoroughly.
  4. Mix in taco seasoning and green chiles, stirring well. Cook for another 2-3 minutes until fragrant.
Assembly & Baking
  1. Preheat your oven to 350°F (175°C). In a baking dish, layer spoonfuls of the beef mixture, followed by cheese and tortillas. Repeat layers, finishing with a generous amount of cheese on top.
  2. Pour full-fat cooking cream over the top and bake for 25-30 minutes, or until the cheese is golden and bubbly.
  3. Remove from the oven and let it cool for 5 minutes. Garnish with chopped green onions before serving.

Notes

Consider adding spinach or kale for extra nutrients. You can also substitute sour cream with Greek yogurt for creaminess.
