- If you're making homemade tortillas, mix the almond flour and eggs to form a dough. Roll into small balls and flatten into thin disks. Cook in a hot skillet until slightly crispy, then set aside.
- In a large, heavy-bottomed cast iron skillet, heat olive oil over medium heat. Add diced onions and green peppers, sautéing until soft.
- Incorporate ground beef and brown thoroughly.
- Mix in taco seasoning and green chiles, stirring well. Cook for another 2-3 minutes until fragrant.
Assembly & Baking
- Preheat your oven to 350°F (175°C). In a baking dish, layer spoonfuls of the beef mixture, followed by cheese and tortillas. Repeat layers, finishing with a generous amount of cheese on top.
- Pour full-fat cooking cream over the top and bake for 25-30 minutes, or until the cheese is golden and bubbly.
- Remove from the oven and let it cool for 5 minutes. Garnish with chopped green onions before serving.
Notes
Consider adding spinach or kale for extra nutrients. You can also substitute sour cream with Greek yogurt for creaminess.
