Ingredients
  

For the crust
  • 2 cups graham cracker crumbs Use high-quality graham crackers.
  • 1/4 cup granulated sugar Regular or coconut sugar can be used.
  • 1/2 cup unsalted butter, melted Ensure butter is at room temperature.
For the lime filling
  • 8 ounces cream cheese, softened Full-fat cream cheese for best texture.
  • 14 ounces sweetened condensed milk Adds sweetness and creaminess.
  • 1/2 cup key lime juice Fresh is best; bottled version works too.
  • 1 tablespoon lime zest For added zing.
For the whipped cream
  • 2 cups heavy whipping cream Chill your mixing bowl for best results.
  • 1/4 cup powdered sugar Stabilizes and sweetens whipped cream.
  • 1 teaspoon vanilla extract Use pure vanilla for best flavor.

Method
 

Preparation
  1. In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until well-coated and resembling wet sand. Set this aside.
  2. In a separate bowl, beat the cream cheese until smooth. Gradually add the sweetened condensed milk, key lime juice, and lime zest, mixing until creamy.
  3. In another bowl, whip together the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
Assembly
  1. In a trifle dish or individual glasses, layer one-third of the graham cracker mixture, followed by half of the lime filling, then a layer of whipped cream. Repeat layers and finish with whipped cream on top.
  2. Garnish with additional lime zest for color and flavor, and chill in the refrigerator for at least 2 hours before serving.

Notes

Store in the fridge for up to 3 days, but best enjoyed within 24 hours. Adjust sweetness of the lime filling to taste.
