Ingredients
  

Brownie Base
  • 1 box yellow cake mix Duncan Hines recommended for consistent results
  • 1 box lemon instant pudding mix
  • 1/3 cup lemon juice Freshly squeezed is best
  • 2 large eggs Room temperature for better mixing
  • 1 tsp lemon zest Use a microplane for the best results
Lemon Glaze
  • 1 cup powdered sugar Sifted to avoid lumps
  • 1 tbsp lemon juice For glaze
  • Lemon zest For garnish

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Grease a 9×13 inch baking dish with non-stick cooking spray or line it with parchment paper.
  3. In a large mixing bowl, combine the yellow cake mix and lemon instant pudding mix. Stir in the lemon juice, eggs, and lemon zest until fully combined.
Baking
  1. Pour the batter into the prepared baking dish, smoothing the top. Bake for 22-24 minutes until edges are lightly golden.
  2. Allow the brownies to cool completely in the baking dish on a wire rack.
Glaze Preparation
  1. In a small bowl, whisk together powdered sugar and lemon juice until smooth.
  2. Drizzle the glaze over the cooled brownies and sprinkle with additional lemon zest.
Serving

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. These brownies can also be frozen for up to 3 months.
