Preparation
- Preheat your oven to 350 degrees F (175 degrees C).
- Grease a 9×13 inch baking dish with non-stick cooking spray or line it with parchment paper.
- In a large mixing bowl, combine the yellow cake mix and lemon instant pudding mix. Stir in the lemon juice, eggs, and lemon zest until fully combined.
Baking
- Pour the batter into the prepared baking dish, smoothing the top. Bake for 22-24 minutes until edges are lightly golden.
- Allow the brownies to cool completely in the baking dish on a wire rack.
Glaze Preparation
- In a small bowl, whisk together powdered sugar and lemon juice until smooth.
- Drizzle the glaze over the cooled brownies and sprinkle with additional lemon zest.

Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. These brownies can also be frozen for up to 3 months.
