For the Chicken
  • ¼ cup fresh lemon juice Fresh is best!
  • 2 tablespoons olive oil Extra virgin is recommended.
  • 2 cloves garlic, minced Fresh garlic preferred.
  • 2 teaspoons dried oregano Mediterranean flavor.
  • ½ teaspoon paprika Adds slight smokiness.
  • ½ teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Freshly ground is optimal.
  • 4 pieces boneless, skinless chicken breasts (6 ounces each) Choose antibiotic-free or organic if possible.
For the Sides
  • 1.5 pounds yellow potatoes, cut into 1-inch pieces Russet potatoes work too; adjust cooking time.
  • 1 tablespoon olive oil Adds more flavor.
  • 1 teaspoon garlic powder Garlic lover's addition.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.

Method
 

Preparation
  1. In a medium bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, paprika, salt, and pepper until well combined.
  2. Add the chicken breasts to the bowl, ensuring each piece is generously coated in the marinade. Cover and let it marinate in the fridge for at least 30 minutes or up to overnight for maximum flavor.
  3. While the chicken is marinating, preheat your oven to 400°F (200°C).
Cooking
  1. Place the marinated chicken breasts on a sheet pan lined with parchment paper. Roast for 25-30 minutes, or until the chicken is golden brown and juices run clear.
  2. In a separate bowl, toss the yellow potato pieces with olive oil, garlic powder, salt, and pepper. Spread them evenly on another sheet pan.
  3. Place the potatoes in the oven and roast them for 30-35 minutes till they’re tender and golden brown.
Serving
  1. Once everything is done, slice the chicken and serve alongside the roasted potatoes.

Notes

For best results, allow chicken breasts to sit at room temperature for 15-20 minutes before marinating. For added flavor, consider adding lemon peel zest into the marinade.
