  • 1 tablespoon honey Local honey offers fabulous flavor and benefits.
  • 1/4 teaspoon salt Adjust to your taste.
  • 3 dashes ground black pepper Freshly cracked gives a better flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (176°C) to achieve a crispy golden exterior.
  2. Rinse and scrub the baby potatoes gently to remove any dirt. Cut slits into each potato, ensuring not to cut all the way through to create pockets for flavor.
  3. In a mixing bowl, combine the olive oil, melted butter, minced garlic, Italian parsley, lemon juice, honey, salt, and black pepper. Whisk until well blended.
  4. Place the potatoes in a roasting pan and brush them generously with the oil mixture, making sure to coat the insides of the slits.
Cooking
  1. Roast the potatoes in the preheated oven for 1 hour. Baste them with the remaining oil mixture at the 30-minute mark for ideal crispiness.
