Ingredients

Brownies
  • 1 cup unsalted butter, melted Always use unsalted butter for better control over the brownie’s flavor.
  • ½ cup unsweetened cocoa powder Look for high-quality cocoa for that deep chocolate richness.
  • 2 cups all-purpose flour I prefer all-purpose flour to give these brownies the right balance of structure and tenderness.
  • 2 cups granulated sugar Feel free to substitute with coconut or brown sugar for a different flavor profile.
  • 4 large eggs Room temperature eggs blend better, resulting in an overall smoother batter.
  • 4 teaspoons pure vanilla extract Always opt for pure vanilla for the best flavor.
Frosting
  • ¼ cup unsalted butter, softened Make sure it’s at room temperature for easy mixing.
  • ¼ cup milk Any kind works—whole, skim, or even a nut milk for a dairy-free option.
  • ¼ cup unsweetened cocoa powder Again, high quality is key!
  • 3 cups powdered sugar The perfect sweet topping that adds that delightful pop of flavor.

Method

Brownie Directions
  1. Preheat your oven to 350°F (175°C) to ensure even cooking.
  2. Grease a 9×13 inch baking pan with butter or line it with parchment paper for easy removal.
  3. In a medium bowl, whisk together the flour, cocoa powder, and salt to combine the dry ingredients properly.
  4. In a large bowl, mix the melted butter and sugar until smooth. Add the eggs, one at a time, followed by the vanilla extract. Mix until combined before gently folding in the dry ingredient mixture.
  5. Pour the brownie batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  6. Allow the brownies to cool in the pan while you prepare the frosting.
Frosting Directions
  1. In a medium bowl, beat together the softened butter and cocoa until smooth.
  2. Gradually add the milk and powdered sugar, mixing until you achieve a spreadable consistency.
  3. Once the brownies are cooled, spread the frosting evenly over the top using a spatula.
  4. Allow the frosting to set for a few minutes, then slice and serve your gooey Lunch Lady Brownies!

Notes

Keep brownies in an airtight container at room temperature for up to 3 days, or in the fridge for a week for extended freshness.
