Prepare the Dipping Sauce
- In a small bowl, combine the fish sauce, lime juice, and sugar. Stir until the sugar is mostly dissolved. Add the sliced garlic, shallots, and chilies. Cover and let it sit for at least 10 minutes to let the flavors meld.
Cook the Eggs
- Crack the eggs into a bowl, being careful not to break the yolks.
- Heat a non-stick pan over medium heat and add the neutral oil. Once shimmering, test the pan temperature with a drop of egg white—if it sizzles, you’re ready!
- Gently pour the eggs into the pan and use a spatula to push the edges of the whites toward the center, giving it a circular shape.
- Carefully break the yolks to create that marbled effect. Cook until the whites are set but the yolks remain semi-runny, about 1.5 minutes.
Serve Up
- Slide the beautifully marbled eggs onto a bed of jasmine rice. Drizzle the vibrant sauce generously over the eggs, allowing it to seep in.
- If desired, heat any additional proteins or veggies you plan to serve on top before adding them.
Notes
For a more pronounced marbling, gently swirl the eggs as they cook. Always go for medium heat for perfectly delicately cooked eggs.
