For the Strawberry Cold Foam
  • 3/4 cup strawberries, hulled and sliced into 1/4-inch pieces Fresh is best; frozen can work in a pinch.
  • 2.5 tsp sugar Adjust based on your sweetness preference.
  • Ice To keep your drink chilled.
  • 1.25 cup milk Oatly Full Fat recommended for creaminess; any milk will do!
  • a pinch sea salt Elevates flavors.
  • 4 tbsp hot water About 175 degrees F, the perfect temp for matcha.
  • 1 cup cream, chilled The colder, the better.
  • 2.5 tsp maple syrup A lovely twist of sweetness.
  • 1 tsp vanilla essence Because who doesn’t love a hint of vanilla?
For the Matcha Latte
  • 1.25 tsp matcha Ceremonial grade recommended for the best taste.
  • 4 strawberries finely diced into 1/8-inch pieces For integrating into the foam.

Preparation
  1. Whip the cream: Pour the chilled cream into a bowl. Using an electric mixer or a whisk, whip until soft peaks form. Add the finely diced strawberries, vanilla essence, maple syrup, and a pinch of sea salt. Continue whipping until the foam thickens, about 3-4 minutes. Set aside.
  2. Mix the matcha: Place your matcha powder in a bowl and pour the hot water over it. Whisk vigorously until the mixture is smooth and frothy—this should take about 1-2 minutes.
  3. Prepare the strawberries: In a tall glass, muddle the sliced strawberries with sugar until the juices start to release. This usually takes about 30 seconds.
Building the Drink
  1. Fill the glass with ice and pour milk over the muddled strawberries, stirring gently.
  2. Pour the whisked matcha over the milk, creating beautiful layered colors.
  3. Generously add the luscious strawberry cold foam on top.

Notes

Quality matters—using high-quality matcha will make a noticeable difference. Make the cold foam a few hours in advance and store in the fridge.
