  • 2 cups Tomatoes (diced) Opt for vine-ripened or cherry tomatoes for sweetness.
  • 1 cup Olives (sliced) Kalamata olives are best but green olives can be mixed in.
  • 1 cup Bell Peppers (diced) Use a mix of red, yellow, and orange bell peppers.
Cheese
  • 1 cup Feta Cheese (crumbled) Use high-quality feta; goat cheese is a great alternative.
Dressing
  • 1/4 cup Olive Oil Extra virgin olive oil is ideal.
  • 2 tablespoons Lemon Juice Freshly squeezed for best results.
  • to taste Salt and Pepper Use freshly ground pepper and sea salt.

Method
 

Preparation
  1. Chop the cucumbers, tomatoes, olives, and bell peppers into bite-sized pieces.
  2. In a large bowl, combine the chopped vegetables.
  3. Crumble the feta cheese over the veggie medley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until emulsified.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
