  • 1/2 piece zucchini (or cucumber sliced thin, lengthwise) Both add a refreshing crunch.
  • 1 handful baby spinach Can be substituted with arugula or mixed greens.
  • 1 small to medium tomato, sliced thin Ensure you get the juices, which adds flavor.
  • 1 1/2 teaspoons feta or goat cheese Try President Feta for authenticity.
  • 4 to 5 pieces chopped kalamata olives or a spoonful of olive tapenade
  • 2 slices whole grain bread Or your favorite bread.

Method
 

Preparation
  1. Slice your zucchini or cucumber lengthwise into thin strips to create ribbons.
  2. Slice your tomato thinly, ensuring you get the juices.
Toast the Bread
  1. Heat your skillet or toaster. Toast the bread until golden-brown.
Assemble the Sandwich
  1. Spread hummus generously on both slices of toasted bread.
  2. Layer zucchini, tomatoes, and kalamata olives or olive tapenade on one slice.
  3. Crumble cheese generously atop your veggies, followed by baby spinach.
  4. Top with the second slice of bread, hummus side facing down.
Serve
  1. Slice the sandwich in half and serve immediately.

Notes
