Preparation
  1. Heat a heavy-bottomed cast iron skillet over medium heat and add a splash of oil.
  2. Add the ground beef, seasoning generously with salt and pepper. Cook until browned, breaking it apart with a spatula.
  3. While the beef cooks, slice the sandwich rolls and lightly toast them until golden brown.
  4. Once the beef is cooked, reduce the heat and pile on the cheese, allowing it to melt.
  5. Assemble your sandwich by scooping a generous portion of the cheesy beef mixture into the bottom half of each roll, topping with pico de gallo and jalapeƱos.
  6. Place the top half of the roll on and serve immediately.
