Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat together the softened butter and 1/2 cup of powdered sugar until light and fluffy (about 2-3 minutes).
  3. Mix in the vanilla until well combined.
  4. Gradually add in the flour and salt, mixing just until combined.
  5. Fold in the mini chocolate chips using a spatula.
  6. Scoop out the dough and roll into small balls (about 1 inch in diameter). Place them on a baking sheet lined with parchment paper, leaving some space in between each cookie.
Baking
  1. Bake for 15-20 minutes or until the bottoms are lightly golden.
  2. Allow the cookies to cool slightly on the baking sheet for about 5 minutes, then roll them in extra powdered sugar while still warm.
  3. Let them cool completely on a wire rack before serving.

Notes

Store in an airtight container at room temperature for up to a week, or freeze for up to three months. You can prepare the dough ahead of time; just shape and freeze the balls for a quick cookie fix later.
