  • 1 cup mixed fresh berries Use such as raspberries, blueberries, and strawberries. Fresh is key.
  • 1/4 cup rum Optional, for a touch of warmth.
  • whipped cream for topping Use homemade for a fresher taste, or store-bought will suffice.
  • fresh mint leaves for garnish Adds a pop of color and a refreshing bite.

Preparation
  1. Prepare the vanilla pudding by following the package instructions using the 2 cups of milk. Stir well until smooth and let it set.
  2. In a separate bowl, whip the heavy cream with the 2 tablespoons of sugar and 1 teaspoon of vanilla extract until stiff peaks form, which should take about 3-5 minutes on medium speed.
  3. Slice the store-bought pound cake into small, bite-sized cubes, about 1-inch in size.
  4. In another bowl, combine the mixed fresh berries and mix with the optional rum, tossing until the berries are lightly coated.
Assembly
  1. Begin assembling by placing a layer of pound cake cubes at the bottom of each serving glass.
  2. Top the cake with a layer of vanilla pudding, followed by a layer of the mixed berries.
  3. Repeat the layering of pound cake, pudding, and berries until each glass is generously filled, aiming for at least two layers.
  4. Finish the trifles with a generous dollop of whipped cream on top and garnish with fresh mint leaves.
