Preparation
- Prepare the vanilla pudding by following the package instructions using the 2 cups of milk. Stir well until smooth and let it set.
- In a separate bowl, whip the heavy cream with the 2 tablespoons of sugar and 1 teaspoon of vanilla extract until stiff peaks form, which should take about 3-5 minutes on medium speed.
- Slice the store-bought pound cake into small, bite-sized cubes, about 1-inch in size.
- In another bowl, combine the mixed fresh berries and mix with the optional rum, tossing until the berries are lightly coated.
Assembly
- Begin assembling by placing a layer of pound cake cubes at the bottom of each serving glass.
- Top the cake with a layer of vanilla pudding, followed by a layer of the mixed berries.
- Repeat the layering of pound cake, pudding, and berries until each glass is generously filled, aiming for at least two layers.
- Finish the trifles with a generous dollop of whipped cream on top and garnish with fresh mint leaves.
Chilling and Serving
- Chill the assembled mini Christmas trifles in the refrigerator for at least 1 hour before serving to let the flavors meld beautifully.
- Serve with joy and enjoy compliments from family and friends!
Notes
Make sure to give enough time for the pudding to set properly. Chilling for at least 1 hour helps the flavors develop. Fresh berries are best added just before serving for optimal appearance.
