For the bites
  • 1 sheet puff pastry (thawed) Use high-quality, all-butter puff pastry for the best flavor.
  • 4 oz Brie cheese (rind removed and cut into cubes) Feel free to experiment with different brands.
  • 0.5 cup cranberry sauce (homemade or store-bought) Homemade sauce can elevate this dish.
  • 1 large egg (beaten, for egg wash) This ensures a beautifully browned crust.
  • 1 pinch salt Essential for enhancing flavors.
  • 1 pinch fresh ground pepper Essential for enhancing flavors.
  • to taste fresh thyme leaves or chopped pistachios (for garnish) Fresh herbs brighten flavors.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a mini muffin tin or line it with paper liners.
  3. Roll out the thawed puff pastry until 1/8-inch thick. Cut out 24 circles using a 2-inch round cutter.
  4. Press each pastry circle firmly into the muffin tin wells.
Filling
  1. Place a cube of brie cheese in each cup.
  2. Top with about ½ teaspoon of cranberry sauce and sprinkle with salt and pepper.
Baking
  1. Brush the edges of the pastry with the beaten egg.
  2. Bake for 12-15 minutes until the pastry is puffed and golden brown.
Serving
  1. Let the bites cool in the pan for 2 minutes before removing them.
  2. Garnish with fresh thyme or chopped pistachios and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. These bites can also be frozen before baking for up to 2 months. If reheating, place in a 350°F (175°C) oven for about 5 minutes.
