Preparation
- Preheat your oven to 400°F (200°C).
- Lightly grease a mini muffin tin or line it with paper liners.
- Roll out the thawed puff pastry until 1/8-inch thick. Cut out 24 circles using a 2-inch round cutter.
- Press each pastry circle firmly into the muffin tin wells.
Filling
- Place a cube of brie cheese in each cup.
- Top with about ½ teaspoon of cranberry sauce and sprinkle with salt and pepper.
Baking
- Brush the edges of the pastry with the beaten egg.
- Bake for 12-15 minutes until the pastry is puffed and golden brown.
Serving
- Let the bites cool in the pan for 2 minutes before removing them.
- Garnish with fresh thyme or chopped pistachios and serve warm.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. These bites can also be frozen before baking for up to 2 months. If reheating, place in a 350°F (175°C) oven for about 5 minutes.
