Mini Peach and Cream Cheese Tarts

Ingredients
  

For the tart crust
  • 2 cups all-purpose flour
  • 1 cup cold unsalted butter High-fat butter works best for a flaky crust.
  • 1/2 tsp salt
  • 1/4 cup ice water
For the filling and topping
  • 8 oz cream cheese slices (1/2 inch thick) Use softened cream cheese.
  • 2 fresh peaches, sliced Choose ripe but firm peaches.
  • 1 tsp cinnamon
  • 1 tbsp lemon juice Freshly squeezed for best flavor.
  • 2 tbsp honey For natural sweetness.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the flour and salt. Grate the cold butter into the mix and integrate until it resembles coarse crumbs.
  3. Gradually add the ice water until the dough comes together. Form into a ball, wrap in plastic, and refrigerate for 30 minutes.
  4. On a floured surface, roll out the chilled pastry to about 1/8-inch thickness and cut into circles that fit the mini tart tin.
  5. Press the pastry circles into the mini tart tin.
Assembly
  1. Fill each tart with a slice of cream cheese and top with fresh peach slices.
  2. In a small bowl, whisk together cinnamon, lemon juice, and honey. Brush this glaze over the tarts.
Baking
  1. Bake for 20-25 minutes or until golden brown. Allow to cool before serving.

Notes

For a beautiful presentation, serve the tarts garnished with mint leaves. Pair them with sparkling wine or tea.
