Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine chocolate cookie crumbs and melted butter until well mixed, forming a cohesive mixture. Press the crust mixture firmly into the bottom of a pie dish.
Filling
  1. In a saucepan over medium heat, combine heavy cream and semi-sweet chocolate chips. Stir until the chocolate is fully melted and smooth.
  2. In a separate bowl, whisk together sugar, eggs, vanilla extract, cocoa powder, and a pinch of salt until smooth.
  3. Gradually add the chocolate mixture to the egg mixture, whisking continuously to avoid scrambling the eggs.
Baking
  1. Pour the filling into the prepared crust and smooth the top with a spatula.
  2. Bake for about 25-30 minutes, or until the filling is set in the center.
  3. Remove from oven, let cool for a few minutes, then refrigerate for at least 2 hours.
  4. Serve topped with a dollop of whipped cream.

Notes

To reheat, place pieces in an oven at 350°F (175°C) for about 10-15 minutes. Avoid microwaving to preserve texture. For a gluten-free version, use gluten-free chocolate cookies. Nut options include chopped walnuts or pecans for added crunch.
