Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine chocolate cookie crumbs and melted butter until well mixed, forming a cohesive mixture. Press the crust mixture firmly into the bottom of a pie dish.
Filling
- In a saucepan over medium heat, combine heavy cream and semi-sweet chocolate chips. Stir until the chocolate is fully melted and smooth.
- In a separate bowl, whisk together sugar, eggs, vanilla extract, cocoa powder, and a pinch of salt until smooth.
- Gradually add the chocolate mixture to the egg mixture, whisking continuously to avoid scrambling the eggs.
Baking
- Pour the filling into the prepared crust and smooth the top with a spatula.
- Bake for about 25-30 minutes, or until the filling is set in the center.
- Remove from oven, let cool for a few minutes, then refrigerate for at least 2 hours.
- Serve topped with a dollop of whipped cream.
