  • 1 cup all-purpose flour Substitute with whole wheat flour for a heartier feel.
  • 1/2 cup brown sugar Dark brown sugar adds extra depth of flavor.
  • 1/2 cup butter, softened Best at room temperature for easier mixing.
  • 1/2 teaspoon vanilla extract Pure vanilla extract enhances flavor.
  • 1/2 teaspoon salt Balances sweetness.
  • 1 cup mixed berry jam Homemade or store-bought works well.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine oats, flour, brown sugar, and salt. Mix well.
  3. Stir in softened butter and vanilla extract until crumbly.
  4. Press half of the oat mixture into a greased 8x8-inch baking pan to form the base.
  5. Spread mixed berry jam evenly over the crust.
  6. Sprinkle the remaining oat mixture over the jam.
  7. Bake for 25-30 minutes until the top is golden brown.
  8. Allow to cool for at least 10 minutes before cutting into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. These bars can be frozen for up to 2 months.
