Ingredients
  

Chocolate Base
  • 1/2 Cup Butter Ensure it's at room temperature.
  • 1 Cup Evaporated Milk Adds creaminess.
  • 1 Cup Granulated White Sugar Adjust sweetness to taste.
  • 1/4 Cup Cocoa Powder Use unsweetened cocoa for the best flavor.
Dry Ingredients
  • 2 Cups Rolled Oats Use old-fashioned for best texture.
  • 2 Cups Unsweetened Coconut Shredded or flaked, with extra for rolling.

Method
 

Preparation
  1. In a medium saucepan over medium heat, melt the butter.
  2. Add evaporated milk and granulated sugar; stir and bring to a slow boil.
  3. Once it reaches a syrup-like consistency (about 5 minutes), stir in cocoa powder and simmer for another minute.
  4. Remove from heat and allow the mixture to cool slightly.
Mixing
  1. In a large bowl, combine rolled oats and unsweetened coconut.
  2. Pour the cooled chocolate mixture into the bowl and mix until thoroughly combined.
  3. Cover and refrigerate for at least 1 hour.
Forming and Coating
  1. Remove chilled mixture from fridge and scoop portions with a tablespoon.
  2. Roll into balls and repeat until all dough is used.
  3. Roll each ball in additional shredded coconut until fully coated.
  4. Refrigerate in an airtight container for another hour.

Notes

Snowballs can be stored in an airtight container in the fridge for up to a week.
