Prepare the Crust
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust.
Make the Filling
- In a large mixing bowl, beat softened cream cheese until smooth and fluffy (about 2-3 minutes). Gradually add powdered sugar and vanilla extract, mixing until fully combined.
- Fold in whipped cream gently using a spatula until fully incorporated.
Assemble the Cheesecake
- Spread the cream cheese mixture over the crust in the springform pan.
- Top with apple pie filling and sprinkle with ground cinnamon.
Chill and Serve
- Refrigerate for at least 4 hours (or ideally overnight) until the cheesecake is set.
