  • 1 cup Pecans (chopped) Can be swapped for walnuts or almonds.
  • 1 cup Dried Cranberries Use dried to avoid unnecessary moisture.

Method
 

Preparation
  1. Gather all ingredients into separate bowls.
  2. In a medium saucepan over low heat, melt 1/2 cup unsalted butter and 1 cup sugar, stirring continuously until syrupy.
  3. Stir in 1/4 cup of heavy cream, 1 teaspoon of vanilla extract, and 1/4 teaspoon salt.
  4. Once combined, fold in 1 cup of chopped pecans and 1 cup of dried cranberries.
  5. Add 1 cup of rolled oats to the mixture and stir until combined.
  6. Drop spoonfuls of the mixture onto wax paper or a silicone mat and shape as desired.
  7. Chill in the refrigerator for about 10-15 minutes until set.
Serving
  1. Once set, serve immediately or store for later.

Notes

Best stored in an airtight container at room temperature for up to a week. Can freeze for up to three months.
