  • 2 cups corn flakes Use high-quality corn flakes for the best crunch.
  • 1 cup peanut butter Opt for creamy or chunky, 100% peanut butter without added sugars.
  • 3/4 cup honey or maple syrup Pure maple syrup is an excellent substitute for a vegan option.
  • 1/2 teaspoon vanilla extract A splash of pure vanilla elevates the flavor.
  • 1/4 cup chocolate chips Optional; use mini chocolate chips or dairy-free versions.

Preparation
  1. In a medium saucepan, over low heat, combine the peanut butter and honey (or maple syrup) until melted, roughly 3-5 minutes. Stir frequently.
  2. Remove from heat and stir in the vanilla extract.
  3. Pour the corn flakes into the mixture and stir gently until evenly coated.
  4. If using, stir in chocolate chips while the mixture is still warm.
  5. Line an 8x8 inch baking dish with parchment paper. Pour the mixture into the dish and press down firmly.
  6. Place the dish in the refrigerator for at least 30 minutes to set.
  7. Once set, remove from the dish, cut into squares, and serve.

Notes

Store in an airtight container at room temperature for up to 5 days. Refrigerate for up to a week.
