  • 1 cup almond flour For an exquisite nutty flavor.

  • 2 cups all-purpose flour The base of the cookie.

  • 1 teaspoon ground cinnamon (or cardamom) Spices add warmth; feel free to swap.
  • 16 tablespoons butter Slightly softened for easier mixing.
  • 1 large egg Cold for better texture.
  • 1 teaspoon vanilla bean paste or extract For a fragrant touch.
Filling Ingredients
  • ½ cup jam, jelly, or curd Choose your favorite flavor.
  • ¼ cup powdered sugar For dusting on top.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line at least two baking sheets with parchment paper.
  2. In a large mixing bowl, combine almond flour, granulated sugar, all-purpose flour, salt, and cinnamon.
Mixing
  1. Add the cool, slightly softened butter and mix on low for 3-4 minutes until the mixture resembles sandy breadcrumbs.
  2. Incorporate the cold egg and vanilla, mixing just until a dough forms.
Rolling and Baking
  1. Turn the dough onto a floured surface and roll it to about ¼” thickness. Cut out shapes with a cookie cutter, ensuring to cut holes in half.
  2. Transfer to baking sheets, ensuring enough space between cookies, and bake for 10-12 minutes.
  3. Let cookies cool for 5-10 minutes on baking sheets before dusting with powdered sugar.
  4. Spread jam onto solid cookies and sandwich with the ones with holes.

Notes

Store in an airtight container at room temperature for up to a week. Dough can be prepared a day in advance and frozen for up to three months.
