Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- In a large bowl, combine the rolled oats, grated carrots, and chopped apples. Stir until well mixed.
- In another bowl, whisk together the applesauce, honey or maple syrup, cinnamon, baking powder, salt, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients. Mix until everything is well combined to form a thick, sticky batter.
- Spoon the mixture into your prepared baking dish, spreading it evenly to the edges.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Cool completely in the baking dish before lifting out and cutting into squares.
Notes
Store bars in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. These bars can be prepared ahead and frozen for up to 3 months. If they feel too sticky, you may have added too much wet ingredients.
