Wet Ingredients
  • 1/2 cup unsweetened applesauce Helps keep the bars moist.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats, grated carrots, and chopped apples. Stir until well mixed.
  3. In another bowl, whisk together the applesauce, honey or maple syrup, cinnamon, baking powder, salt, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients. Mix until everything is well combined to form a thick, sticky batter.
  5. Spoon the mixture into your prepared baking dish, spreading it evenly to the edges.
  6. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Cool completely in the baking dish before lifting out and cutting into squares.

Notes

Store bars in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. These bars can be prepared ahead and frozen for up to 3 months. If they feel too sticky, you may have added too much wet ingredients.
