Dry Ingredients
  • 2 cups all-purpose flour I recommend King Arthur Flour for its consistent results
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger Freshly ground if possible, for a stronger flavor
  • 1 teaspoon ground cinnamon Ceylon cinnamon gives a sweeter flavor
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Let it sit at room temperature for at least 30 minutes
  • 1/2 cup brown sugar Dark brown sugar adds richer flavor
  • 1/2 cup molasses Blackstrap for a more robust taste
  • 1 large egg
  • 1/2 cup hot water This helps bloom the spices and deepens the flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together the flour, baking soda, spices, and salt.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the molasses and egg until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the hot water, mixing until smooth.
Baking
  1. Pour the batter into your prepared baking pan and smooth out the top.
  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow to cool for 10 minutes in the pan before transferring it to a wire rack.

Notes

Letting it rest allows the flavors to meld beautifully. Store in an airtight container at room temperature for up to 5 days. It can also be frozen for up to three months.
